With his pioneering experience and a strong foundation in Western Cuisine, Chef Daniel Koh has established himself as a culinary icon in the industry. His journey began in 1970 when he stepped into the kitchen world as a dishwasher and floor cleaner, working alongside sous chefs at the prestigious Singapore Hyatt Hotel. This invaluable opportunity allowed him to immerse himself in the world of great Western cuisines, including renowned establishments like Hugo Restaurant (French Cuisine), Pete’s Palace (Italian Cuisine), Nutmeg (American Grill), and Local Food.
 
1978 Chef Daniel showcased his exceptional talent by participating in the First “FoodAsia Salon Culinaire” competition from April 26 to 29, 1978. He emerged triumphant, winning four medals across four categories: one gold, one silver, and two bronze. This remarkable achievement served as a testament to his culinary prowess and solidified his belief in a future dedicated to mastering the art of cooking.

Chef Daniel pursued a Hotel Management course at SHATEC in 1984 to further refine his skills. The following year, he was selected as the opening Chef of the prestigious Hyatt Hotel in Melbourne, Australia. The renowned Hyatt Hotel kitchen became his learning ground, where he continued to achieve awards and gain popularity. Throughout his illustrious career, he held positions as an executive Chef in notable establishments such as Sheraton Tower, Concorde Hotel, and Holiday Inn.

 

In 1988, Chef Daniel ventured into entrepreneurship, becoming the Founder and Owner of "Chinois Restaurant" on Toorak Road in Melbourne, Australia. His culinary expertise and innovation led Chinois Restaurant to be recognized as the best restaurant in Melbourne, scoring an impressive 90% rating in the same year.

 

Chef Daniel's cuisine specializes in Western and French cooking techniques, infused with an oriental touch of Japanese style. This unique fusion creates an exceptional dining experience that blends flavours and techniques from the East and West. His remarkable talent and distinctive approach have earned him widespread popularity and the trust of discerning diners.

 

His culinary achievements have transcended boundaries, as he had the privilege of cooking for esteemed figures such as Queen Elizabeth, Rod Stewart, Kenny G, Luciano Pavarotti, and Michael Jackson. These experiences added to his repertoire and reinforced his commitment to culinary excellence.

Chef Daniel Koh has received numerous awards and appreciation from various institutions and organizations throughout his career. His remarkable talent, dedication to his craft, and innovative culinary style have established him as one of the best chefs in Singapore.

 

Chef Daniel owns and operates multiple restaurants in Singapore, each reflecting his culinary philosophy and commitment to delivering exceptional dining experiences. Additionally, he serves as a panel judge in the International Business Federation (IBF), where he lends his expertise to help showcase and promote Singapore's rich heritage food.
